John's advice above is really im****tant. Whenever I start a company,
I go through a "Proof of Market" phase where I try to get a couple of
sales before going to all of the expense of hiring professionals. If
you're concerned about lawsuits, you might want to limit your
liability by forming a LLC or LLP, but if you're that concerned about
lawsuits, you should probably reconsider starting a company in the
first place.
Better than a CPA is the Small Business Administration.

The government wants you to start a business, and they are willing to
give you free advice. Go to your state's and your city's websites. I
guarantee they will have something helpful for you. There are
hotlines, cl*****, statistics... everything you need.

The work of researching the information and the collateral learning
from the research will be far more valuable to you than having a CPA
tell you what they think the right answer is, and it far outways the
risk of making a mistake and having to change the type of company you
own.
